With MegaSquirt III + MS3 Expander you can take care of 8-cylinder sequential fuel and ignition.  Timed injections, cylinder trim for both fuel and spark

MegaSquirt III had datalogging to SD-card.  Also possible to add sensor inputs, for example fuel pressure, oil pressure etc.  And make engine protection plans based on these sensors.
